Right off the bat I would say it tastes like roast beef. It is even stringy like roast beef. But it has a hint of "gamey" taste to it, depending on how well you soaked it in salt water after you skinned it. "gamey" taste is sort of a metalic blood taste...sort of like having a bloody nose...if you soak it right then it will only be a hint of this as opposed to being very obvious. Deer meat, on the other hand, is not like cow as far as cooking roast beef. Cow has plenty of fat. Deer is almost 100% fat free. So you have to introduce a bit of fat when you cook it to keep it from drying out. I use a small amount of bacon grease to cook it and seal in its juices. Deer is very excellent in stews and soups, since it is so easily dried out. Either that or dried as jerky strips. i just heated up some left over deer steaks right now and they smell exactly like roast beef, but with that slight bloody/metalic/salty "gamey" hint. I know the gamey taste sounds funny, but it isnt that bad at all...its very slight...in fact I use a bit of Heinze 57 sauce to enhance the flavor...very excellent. LOL...I just cut a thin slice of deer meat for my cat and she is eating it up and loving it. |
