Saying "I don't know" is the only and correct answer when, in fact, your don't know.

It doesn’t answer the question of “does God exist?”. It answers the question “Do you know if God exists?”
And if you don’t know, that’s fine. It means you don’t know the answer.

Answering "i dont know" does not answer the question of "do i think of the number *2*?". It answers the question "do you know if i am thinking of *2*. And if you dont know, thats fine. It means you dont know the answer.
And here is how you still dont understand the fundamental mistake you made:

Here you messed up the fact of the existence of god (which is indeed binary) and our knowledge or belief about this purpoted fact, which is NOT binary. Saying "i dont know" about the fact/claim that a god exist (or not) is a perfectly valid answer, if you actually dont know.
"We" dont make proclamations about reality, we usually make statements of what be believe or claim to know. Its people who fell down a religious rabbit hole (like you) who proclaim deities into existence, define them into existence etc..
