Surely, of all people, christians should be able to understand that beliefs and actions can contradict each-other, what with the catholic priests and all.

Evolution, put simply, is about "survival of the fittest". This summation of evolution is exactly that, a summary. It is what happens when nature is left to it's own devices. Humans interfering with this in no way contradicts evolution, which is scientific fact and won't stop being so because of us keeping a few species alive.

In the case of cows, they are useful to us, so we breed them, thus making them fit for their environment, so the species remains.
