Threw together a batch of lentil soup:
- Sauté one minced onion, one stalk of chopped celery and two sliced carrots in olive oil.
- Add broth of choice (I used a 1-litre carton of beef broth).
- Add 1 cup of green lentils.
- Season. I used a bit of celery salt, a lot of black pepper, a bit of kosher salt, dried parsley, and oregano.
- Simmer till lentils are cooked.
