Cartiere Magnani, expensive, but very nice.
I normally use 100 gr paper for my uni notes and it's nice enough. Seeing the pens I own, it's like spreading nutella on local bread
The inks I use are Waterman Florida Blue, Pelikan Brilliant Black-Green-Red, but I think I might go for another black ink as soon as I finish my current bottle.

For its price, I think the Safari is more than decent. It's been my workhorse for a while now. I'm currently using it with Waterman Florida Ink (by refilling the original cartridge with a syringe... I'm gonna get so much flak for this!), but I recently bought a converter for it and I'm going to switch to Pelikan Brilliant Green.
The original Lamy Ink was VERY watery and light, plus the pen is also quite wet too. Florida Blue flows smoothly (still a bit wet though) and has better shading and more personality in general. The Safari serves me well for what I do and sometimes, due to its wetness, I also find myself using it for taking notes during class.

Rinse them with abundant water once every two refills or if they haven't been used in a long time. Also, if you syringe-refill your cartridges, you should rinse the cartridge with water too, so that the dried ink on its walls does not muck up the feed when it mixes with the new ink.
