Baked some banana bread, using a recipe I got out of a Cook's Illustrated magazine. A bit labour-intensive -- you microwave the bananas and strain them to get juice, then reduce it down to a quarter-cup in a pot on the stove, which you then add back into the banana mush -- but it's sooooo good.
