"If evolution is true, how come nothing has evolved in so long?" is a manufactured issue. Remember, many of the people who ask this measure time as a scale between 0-6000/10,000 years. They have little to no knowledge of evolution itself (or any of the theories offered as explanations for evolution). When they ask you why "nothing has evolved" that's not what they're asking at all. Everything is evolving. What they're asking, in a nutshell, is why monsters don't spring forth from the earth on a daily basis. What they have in mind is not evolution, it is magic. No wonder they haven't seen any evidence.
