Because that'd be engaging the logical fallacy of poisoning the well, or burning down wooden women (related to straw men, but witches are made out of wood and supposedly predominately female).

Besides, it's symbolic of how they roped the witches into the trial.

Or to quote Harry Potter, some witches enjoyed burning too much. Because after all, what makes us think that Harry Potter is less of a source than the bible when it comes to witchcraft?

Because Latin is a ridiculous basis for witchcraft... Diana is pretty much Latin's only magical portent.
