You should take another look at your source. That is a Fox video, not anything that is likely to represent what really is going on in this case. Most likely, the professor wanted the students to discuss issues that the student did not want to discuss. Indeed, that is what this article states:

Professor's reply to the grievance. This on top of the fact that the assignments were independently reviewed and the marks confirmed. What I gather is that the girl couldn't fulfill the perfectly legitimate course objectives and submitted an "I Love Jesus" screed. Maybe she'll learn something from this.
AND she got an A for the course anyway, so I don't see the problem
