4th of July Cookout
Got up at 2 this morning to put a brisket in the smoker. Just added 6 racks of ribs. In a couple hours I'll put on the sausage.

I know, you all know I'd rather gnaw on Peter Horton all day, but damn, your smoker rates a close second.

Waddayaknow, and here I just made three kinds of potato salad last night.

First, Autumn Celery Root Potato Salad:
Yukon Gold potatoes, Beets and Celery roots, each peeled, cubed coated in olive oil and salt & pepper, then oven roasted.
Champaign vinegar, horseradish, mustard, & fresh dill whisked into sour cream and folded into the spud mix.

Second up, Bacon n Egg Potato Salad:
Red skin potatoes quartered and boiled, a pound of bacon fried and chopped, with three hard boiled eggs chopped.
Red wine vinegar, fresh diced chives & paprika whisked into a half cup of yogurt added to a diced red onion, diced green onions and then the cooled spud, bacon and egg mix.

Third, Asian Themed make-it-up-as-you-go Potato Salad:
Boiled Blue Potatoes, 2 Jazz apples diced, two stalks of celery diced, diced green onion & 1 shallot diced & fried in bacon fat.
Pickled ginger chopped, sugar cane vinegar, soy sauce, sugar and salt/pepper whisked into a cup of sour cream and then folded into the rest.

What time should I be there? (It'll just be me, the wife and Heidi Rose.)
