The phrase "my true love gave to me" has the same number of syllables as "Tiberius gave to me" if you say "rius" as one syllable. Just saying.

The Twelve Days of Christmas would work well as a mash-up. Also, people could then make up some of their own verses, or change a few lyrics here and there to be funny.
Is this going to be a video compilation? How do we record ourselves and send it to you? What format is best?

Might be best picking and posting an instrumental version for everyone to sing along to so at least everyone will be in time, if not in tune!
