The simplest idea of the beginning of agriculture comes from Mesopotamia, I think. it has been posited by archeaologists that agriculture began in some areas and not others simply because there was a great deal of wild wheat (?) of a certain kind. IE ideal conditions for growing grains.

We can trace areas where the genesis of agriculture most likely occurred (for any given culture) by the prevalence of the wild ancestors of later cultigens in those areas. Wheat did start out as a cultigen in an area where wild wheat already grew well, same for rice or any other staple.
