Actually, that variety of pumpkin is commonly referred to as a jack-o-lantern. They have two uses. One for carving and the other for roasting pumpkin seeds. You don't actually eat that kind of pumpkin, at least here in the states we don't. Pumpkin pie filling comes from a different type of pumpkin.
