I haven't tried it yet, but a friend said he recently made a sandwich with peanut butter on one side, marshmallow fluff on the other, chocolate chips in between, and grilled it so it all melted together. This obviously isn't healthier than jelly, but it sounds really yummy.

What goes well with peanut butter in a sandwich?

OK, there's a place in Portland called "PBJ's".
It's a food cart and they make gourmet PBJs. My favorite is Challah bread, peanut butter, sriracha hot sauce, fresh basil and orange marmalade. Then grilled. Sounds weird. It isn't. It's awesome. Another one that's very good is Challah bread, cherry jam, almond butter (I think), bacon and blue cheese. Something like that. Also awesome. I don't even like cherry jam. 
Fluffernutter sammiches are the shit, but as previously said, eliminate any consideration of health.
PB and sliced apples is fantastic, too. Or eschew the bread altogether and just have apple slices dipped in PB.

Bread
I can't understand the fascination that PBI has over Americans... mean, it's good and all, but to use it on all sandwiches? Meh...too sticky.
I usually go for ham and cheese in between two slices of bread. The ham is usually more like chorizo and the cheese comes in slices (edam style). Banana with cheese is also a very pleasing combination. Almost as good as melon and jamon (I think you call it pork jerky) 
I wouldn't recommend doing this but I'll tell ya about it anyway.
When I was in the Navy stationed on the Nimitz there was this certain petty officer that everyone hated. He loved making peanut butter sandwiches everyday and left his jar of it in the shop out in the open. One day when he wasn't around an Airman that hated him was looking for ways to get him back for being an ass to him. He reached down his pants and pulled clumps of curly pubes out. This looked very painful as he was pulling them out root and all. He took the pubes and put them in the jar of peanut butter. He took a knife and stabbed them down in it and smoothed the top over. The next morning at our shift meeting the petty officer made a sandwich. I was about to die watching this shit. He took a bite and reached in his mouth. He pulled some pubes out. They were black and kinky covered with peanut butter. The dumbass took another bite and pulled more pubes out of his mouth. The fucked up thing is he ate the whole thing! So to answer your question I would say pubes go well with peanut butter. 
I would have told the airman to just cut some hairs off with the knife. You don't have to make a martyr out of yourself.
