What if it bled out before you started?

Safe bet - you have never butchered something you killed yourself.

I have shot a deer - and hit it in the heart - and had it run 200 yards. The blood trail was incredible. Like a slasher movie. When I gutted it - the chest cavity was FULL of blood. ( forward of the diaphram).

And yet - the meat was still bloody.

You would need to hang an animal in a centrifuge to totally exsanguinate it.

Have killed and butchered somewhat in excess of 1000 animals, I can testify that the above is true.

I have a wired meat thermometer.  Stick the probe in, set the desired temperature, and slap it on the side of the oven.  It beeps when my meat reaches temperature.  Set it and forget it.
