Yeah, it'd be tough to do with someone who doesn't care to be around it.
The water around here is pretty hard. But not as hard as the water where we used to live, so I guess that's good? Scotland water would be fantastic!
You can do Guinness clones. I think it involves brewing two different kinds of beer and then mixing them. They had one going at the brewshop when we went there the other day. I could have a look for their recipe; they probably have a kit made up for it.
