She took an IIN "course", which is a non-accredited training program no different to going to one of Doug Graham's training programs. Here's the IIN "curriculum":
It's no different to Scientology claiming to be a "better" "alternative" to psychiatry. The problem with nutrition is that unlike other areas of health such as dentistry, pharmacy, or primary care, it is not illegal for people to sell advice on diet without any qualification. That's what IIN capitalises on, they just churn out people with some basic knowledge about health, the program itself is next to useless in terms of qualifying people to practise, but they encourage their "graduates" to practise as "health coaches" anyway.
The video even blatantly lies about how most nutritionists practise. "Most nutrition experts give their clients a list of foods to avoid, which is why people are so turned off by healthy eating". Not even remotely true. Most nutrition experts look at how to balance nutrition in their client's diet, and that's done through a number of ways, but mainly by adding specific foods to their existing dietary practise. The problem is people are fucking stupid, for example it doesn't matter how many times a nutritionist tells them not to take dietary supplements, they just do it anyway. The video claims students will learn about "superfoods"... there's no such thing as a "superfood". It might get talked about a lot by the public, and in marketing, but it's a meaningless term not used in dietetics.
