Maybe it would be a good idea to talk to someone who has pursued a roughly similar path to yours to become an independent book keeper, just to be sure you don't miss anything important. I would definitely do the charity work to gain experience as long as you don't run into trouble with your funding agency 
I've been pausing and at home since last fall because I've been taking care of our newborn daughter, so I know how that can be really bad for overall morale if you don't have some kind of occupation. I managed to stay very busy writing, without that I would probably have gone insane.
