I mean why don't they just make something new? Why re-make Star Trek? If you want to make a movie about star ships it doesn't have to be automatically Star Trek. Or it doesn't have to be Star Wars because you feel like the story of Star Wars will never have an end, so you even ask yourself why even something bother with something endless?

Brand. The marketing is practically done for you, and Paramount basically had a film premise that everyone was slightly aware of ("beam me up scotty" etc) thanks to pop culture references that they could tailor towards a modern audience (I.e. Non-Trekkies).

That's why the 09 film (which I actually enjoyed) was about a fresh young cast but with the odd references to the OS ("I can't give you any more cappin'" etc etc). The second one sucked, I didn't mind the last one. These reviews sort of explain in much more detail why they were made and, importantly why They were box office successes:
