I smoke it for about 6 or 7 hours slowly, mopping it with sweet wine and smoked on charcoal and mesquite chips. The fat lick is seasoned with 6 pepper, mrs dash, garlic pepper and a touch of cajun..OMG, that brisket is so tender when it comes out. It melts in your mouth.
Im also really good with pulled pork..my wife has an outstanding sauce. We take pork barbeque serious here in North Carolina.
I'm drooling already. North Carolina you say? Hmmm....
Now I can't wait to get my license, a car aaaaaand ROADTRIP!
I just finished a ride with two very nice individuals who happened to be vegans. They let me prattle on for hours about physics, religion and the religious hypocrisy displayed by a large body of Christians.
They were quite nice and willing to listen to reason, asking questions and postulating over different topics.
I didn't ask them about their food preferences though.
Still, they weren't nutty and let me eat my pork rib on the way down south.
