hehe... the faster you go, the more difficult it is to fall off due to lack of balance.
The getting from stopped to moving part is often the tricky one and I guess each person has their own little trick to give the bike some thrust before the feet are on the pedals.
Me? as a right-handed person, I'm also right-legged, so I always start with the right pedal on front, put my foot there and push down as the other foot gets off the ground and my butt slides into the seat. Balance at this stage comes with practice. Your fear is only keeping you from practicing.
Instead of getting the extra wheels, you could get knee and elbow pads, as well as a helmet. That way, falling while training won't be a problem and you can do it over and over again until your brain gets it and you balance properly.
