Empathic, Energy Vampirism, or What?

I'll be completely honest with you. I do not think your ex is an energy vampire. Even if I was open to the idea, the over the phone part killed it. As for empathy making you predict the future in a way (if I read that right), I don't think that, either. I think we sometimes guess right when we get gut feelings. You'll notice that people do not talk about the instances where they got a hunch and it was wrong that often, do they? Well, if they did, it wouldn't seem so weird when one was right.
