Yeah, no shit Floyd had a checkered past. He was sentenced to jail 8 times back when he lived in Houston. Thing is, that's entirely irrelevant to the actual incident of his death. Those crimes happened in Houston, several years before he moved to Minnesota. In an arrest like this, what he did in another city does not matter. Maybe if the matter went to court, then it would, but they didn't do so. What matters is the circumstances surrounding the specific arrest. And the circumstances:

For the record, play this song and imagine that for every second, a guy's neck is pressing your neck to the concrete. And not only is he pressing so hard that you're finding it hard to breathe,  but when the intro starts to shift gear around 5:53, you lose consciousness. You never regain it:




And, furthermore, imagine that there's a crowd of people watching, and most of the people there are pleading with the guy to ease up on his strangulation. He refuses. Because he's a cop, and even as the people who aren't pleading for your life are filming it, there's been a lot of precedent saying that he can get off with a slap on the wrist. 

And why is this happening to you? Because you passed off a counterfeit $20 as real while buying smokes. Unless Floyd told Chauvin about his previous arrests and bragged about them, or if, in the 18 minutes between the police being notified of the crime and Chauvin taking a knee to Floyd's neck, they got into talks with the Houston PD and they gave them his arrest record, there's no way they could have known about his previous record, and I've found ZERO indication that either happened. And even if they did, there's no way he deserved a death like that.
