That many popular brands of banana candies "off banana" flavor is not due to weird ingredients, but the extinction of the banana their recipes were designed to mimic since those "taste profiles" were engineered. The older banana was sweeter, but lacked the more complex hints of it's starchier successor. Put alot of essays and op-eds about the terrible loss of those old bananas in perspective. I'm not even mad, they must have tasted like shit.

Not quite extinct. You can still find them in some other countries, particularly in nations like Burma or Thailand, (where they’re exported to China and Japan). If not there, you might be able to find some if you have good fruit connections (apparently, a few are even grown in Florida), are willing to pay far out the ass for them (ironic, given how Cavendish bananas are usually so cheap in stores), and know what other nations tend to call them.
