Do you eat the purple ones?

I buy whatever 5-pound bags are on sale. Lately, I've been eating Russett Potatoes and Yukon Gold Potatoes. Occasionally, I also get a good deal on all-purpose white potatoes. I also like Maine potatoes, but they're seasonal and don't seem to be available at sale prices very often. 

So kinda for Mister Agenda, on the diet do you eat the potatoes cold for the resistant starch benefits?
