The oldest written record we have are the Septuagint, a Greek language edition of your precious fucking bible and date from the early 3d century BC. The Dead Sea Scrolls, which date from the late 2d century BC at the earliest are the first examples of your pious bullshit being written in Hebrew, although some are in Aramaic and others are also in Greek. The DSS are important precisely because they are the earliest Hebrew biblical texts.
But don't take my word for it. Get off your ass and go Googleing for a single page of your OT in Hebrew which pre-dates the Septuagint.
