Well, for starters she's not one to go against her upbringing. Her family is fairly religious in their beliefs, just not in their practices, and there is an aspect of rebellion to not believing what the rest of your family does. She's just not one to go against the grain like that.
Also, she's not really one to step outside of her comfort zone. The belief that god is watching over her brings her comfort even though she knows that she doesn't really have a good reason to believe so. She's not one to give up that comfort in the pursuit of the truth, regardless of what she actually would conclude the truth was, so she doesn't really think about it out of fear that she might convice herself that what she's been raised as, Catholicism, isn't true.
