The things I said about white bread are true. ( except the hyperbole about cancer)
PLUS white bread has a high Glycemic Index.As a diabetic I do not eat it. I go with whole grain breads and other breads with a low GI and high fibre content,which white bread does not have.
Of course I'm only repeating what I was taught by the dietician at the diabetes clinic,what would she know?

I like to bake bread too.I've gotten baguettes down pretty well* and make a mean a bagel.
*the secret:a moist oven. A simple way is to put a tray of ICE CUBES in the bottom of the oven when you put in the bread.
