I believe you have confused yourself with the rules Judism. Catholisim is a version of Christianity. My suggestion has the OP consider other forms of Christianity.

So, you're claiming that god, who is eternal and unchanging, only wanted us to kill livestock for him 3,000 years ago? What happened? Did Yahweh get tired of the smell of burnt meat?

Me, I find that pretty damn ironic. If we had to kill some extra pigs or cattle today, I'm sure we have the food stores to get away with it; we waste enough food as is. Back then, though, a couple of cattle could be the difference between surviving the winter and starving to death.
