We have witnessed evidence by examples. We have created artificial selection. Scientists can create models for natural selection and view how it takes place. People have been artificially selecting for thousands of years. Take wolves for example. We domesticated and created our own breeds of canines. As you see today, most of the breeds of dogs we have created do not fully resemble wolves but they are related genetically. So, what we see is the evidence that natural selection or selective breeding can modify an animal’s behavior and physical appearance to be very different than their ancestors. In the case of humans, we are genetically related to apes through a common ancestor but we do not fully resemble apes because of natural selection and selective breeding.
