The changing of testaments is not the issue. You are making it so because you do not want to tackle the fact that god's character does change, thus making your assertion that he is unchangeable utterly false.
Two problems with that.
1. Man wrote the OT so we have man's view of what God is like. We then have a later man writing that God spoke to him and said the earlier men lied.
2. The name as originally revealed to Moses was : אֶהְיֶה = I am that I am (OR) I shall become who I am becoming. That hardly sounds like an unchanging God, eh?
