The Illuminati are one of those conspiracies that can't ever be completely disproven. Why? Simple: Every time you do manage to disprove them, the people just say "That's what they want you to believe." More specifically, their theory is that this vast conspiracy goes so far that it completely covers up its own existance. I have to admit, if I really were going to run some secret, global conspiracy and I wanted it to stay secret and if I had the kind of influence the conspiracy buffs credit the illuminati with, I'd be going around and covering my tracks, too.
But, then, it goes into the same territory as God there. Just like God, I don't see compelling evidence to believe in it, so disbelief is my default. I mean, if that's the logic we're going to use, it wouldn't be much of a stretch for me to come out and say that he universe was created by the flying spaghetti monster, but he covered his tracks.
