The definitions are extremely well defined. You must seriously new to the internet. Not that there's anything wrong with that. You must forgive us if we haz a doubtful.
Poe refers to Poe's law, which states roughly that it is impossible to tell the difference between a religious fundamentalist and someone pretending to be one. More generally, a Poe is the term for an atheist (usually) posing as a theist for purposes known only to themselves but often for parody. All too often a blank denial of understanding of the term's meaning is a sure sign that the person actually is a Poe.
N00b is a sort of leet-speak corruption of newbie, i.e. a rookie or similar green neophyte.
