A lemon is acidic but when you mix his juices with salt which is also acidic you get an alkaline solution so at the end is not what you got in the first place but what you get after a certain item come into contact with your digestive system.
A human body is alkaline by nature so when it come into contact with acidic items like meat will suffer and will create so many diseases.

Salts are neither acidic nor alkaline, and mixing a salt with an acid does not result in an alkaline solution. Some salts will produce an acidic or basic solution when added to water.
