Why is evolution hiding?

I'm wondering if some "atheists" reject the belief that life arose from non-life and evolved from simpler creatures to more complex life forms; tiny cell becomes an amoeba, then a lizard, then a monkey, and eventually you !

I know that evolution is indeed a fact but the belief that different types of animals evolved into other species is not fact or we would see them "evolving" into other types or at least need to see this to say it is fact.

Where is the evidence of cats, dogs and horses gradually turning into something else? We do see changes within species. We also see no evidence of gradual change in the fossil record either.

Isn't Evolution still called a theory, a possible explanation or assumption, because it is not testable according to the scientific method?

Looks like I'm late to the party on this one and I haven't read everyone's responses but I'll make the safe assumption that you've already been given these:

1. Abiogenesis is the field of study, mostly Chemistry, relating to life arising from non-life. Evolution is the field of study, mostly Biology, relating to the changes that occurred once life existed that cause speciation. Do not conflate the two or you'll make errors.

2. Evolution has been observed and documented both in the wild and in controlled environments

3. The evidence for evolution is in the fossil record, genetic sequencing, taxonomy, comparative morphology, embryology; they all demonstrate that change over time causes speciation, dependent on a variety of environmental factors.

4. In scientific terms, the word 'Theory' means 'the best explanation of the facts'. This is very different to the mundane meaning as 'best guess'. A theory is composed of facts, is dependent on facts and can change as new facts emerge or our understanding/interpretation of existing facts change.
