Evolution is a fact. It has been observed happening and we have countless examples.
A scientific theory is an explanation of the facts and evidence on hand, and is subject to being revised or completely scrapped if new evidence or knowledge become available.
The Theory of Evolution describes how life on the planet has become so diverse by tracking the evolution of life over the past however many billions of years. It is not a theory in the sense that it's just a guess. At the very least it's a very reliable informed opinion. It cannot be dismissed because it is called a theory; it will always be a theory.
Gravity is a fact. There is also a Theory of Gravity, which has changed in the past and could conceivably change in the future. But it would not affect the fact that gravity exists.
