I can't find anything in scripture that directly states that a man or woman should have only one spouse. In Paul's writings, in his requirements for pastors and deacons, he says that a candidate must be the husband of one wife. Jesus said that Adam and Eve became one flesh and that this is the way it was meant to be from the beginning. If you're "one flesh" with your spouse, it's hard to imagine coming together in the same manner with another person. Christians have taken this stance based on principles taught in scripture.
