I think part of the problem is that people tend to justify their actions after taking them. The adults will think of themselves as the "normal" ones, and describe average individuals as unhealthily skinny.
The same goes for religious people. They've spent years donating time and money to the church, so would rather justify this in increasingly irrational ways, rather than admit that it was stupid and they were wrong.
This isn't unique to these individuals, we all do it and it's very hardnot to. A silly example is my mother, who used to say that you couldn't swim within an hour of eating. This meant that for my entire childhood I had to obey this rule. Having recently told her that this was just an old wives tale, she still goes along with it, saying things like "well I'm sure it was a good idea" and "it's old advice so must be true" etc etc.
