I have also always wondered why there can't be more than one universe, but on the other side of the nothing, perhaps eventually expanding into each other.

Once people get to know you they will have more of an idea where your coming from and vice versa. Don't be discouraged, it's a good question that I have thought about often.
According to theory, boundaries don't really exist in the universe. If you happened to "cross" a boundary of the universe you'd end up on the opposite extreme of the universe. Thus, the universe is an open and closed set that doesn't have an "outside".
