Yeah, I wouldn't root your tablet. Not unless you know exactly what you're doing.

Just disable the apps that you don't use, you should have plenty of space, especially if you set up file/photo folders to automatically upload to the cloud over WiFi.

Take it as a lesson. I know you didn't have any choice in this matter, but if you are buying a phone/tablet in the future, the trade off for buying it through a service provider rather than directly through the manufacturer is bloatware. My last phone had an Amazon suite built in that took me rooting the device to remove a half screen widget from one of my homescreens.
