The biggest health benefit to veganism is that vegans have to pay VERY close attention to what they eat. Think about it: when I go to work each morning, I always stop at a gas station and pick up one of their hot sandwiches for breakfast. Or a donut. Or something. If you're a vegan, you can't exactly do that. You could get a salad, sure, but when it comes to processed foods, you have to see whether it has animal products in it or not. It's easier for them to just eat fresh, non-processed foods, which makes a vegan diet healthier.
Also, the average American diet has way too much fat and salt in it. Vegan diets, on the other hand, avoid a lot of that fat because most fat comes from animal products and salt is often used to preserve meat, which also lowers their salt intake.
Chicken is actually one of the healthiest meats there is, right next to fish. They tend to be very low fat meats, especially when compared to beef and pork. So saying there's no health benefit to chicken is ridiculous. Plant protein isn't bad, but your body isn't able to process it as effeciently as animal protein. This is why protein will always be an issue for vegans. Excluding milk from a diet is also a terrible idea, healthwise, anyway, because milk is probably the most nutrient dense food there is.
