Yeah it is a little weird, especially when you're ripping bits out, unfortunately that is unavoidable. It's cool to see the changes over the centuries where different builders have been in and done repairs and extentions.

I recall visiting one of these historic houses and the guide pointing out the fibers that were visible in the plaster. She told us that these fibers were horsehair and they helped hold the plaster together. We were amazed that we were touching 250 year old horsehair. Must be something similar when working on a 500 year old house. You're touching things that some builder put in place centuries ago.

Also, I don't know how it is in the UK, but around here most houses from the colonial era are listed on the "historic register". While this sounds nice, it means that the owner can't perform any alterations without government approval. Particularly if the work will remove or damage any of the original structure.
