Politeness is good, though for you wouldn't have been able to change her mind. Sounds like you did the right thing at the time.
To me, coming from a religious life, I understand the mindset of following a holy book over a science one. I left it because to me, I realized it was all a lie and I could no longer accept practicing rituals to support a lie. But, before I realized the lie, I thought it was truth. So, the moral of the story is -- not until I left religion, did I ever feel "enlightened."
(So, to the OP -- creationism isn't a theory because it can't be supported by facts. Holy books can't be considered factual evidence.)

I find it hilarious when creationists dismiss evolution as just a theory. Because by stating that evolution is a theory, they are confirming that evolution has been scientifically verified.
Because in scientific language a theory is "is a well-substantiated, unifying explanation for a set of verified, proven hypotheses." While a hypothesis "consists either of a suggested explanation for an observable phenomenon or of a reasoned proposal predicting a possible causal correlation among multiple phenomena".

I laugh when cretinists who actually know fuck all about how evolution actually works dismiss it so blithly.
Usually with examples that don't have anything to do with evolution.
If you're not supposed to ride faster than your guardian angel can fly then mine had better get a bloody SR-71.

Unfortunately, all the claims of scientific discoveries in the bible only happened after science made the discoveries.
And some of the things in the bible are just downright unscientific, like created striped goats by making them look at striped rods. I think that's one scientific experiment which has not been repeatable.

when you're following religion, you focus on things you can't see. when you rid your life of religion, you finally focus on the things you can see, and reality becomes the most important thing.
i remember defending all kinds of strange concepts when i was a christian, and it feels so much better to base all of my reality on...well, reality, now.
But just chiming in to say, i understand how it happens ...how religious people cling to concepts and ideas that have no basis in reality.

And, seriously, creationism isn't even a theory. It can't be. Because, simply put, ignore any question of evidence for now: a theory is meant to offer consistent and useful explanations for phoenomena, ideally, allowing for us to make predictions that make the world make more sense. Beyond "God did it," it does none of these things. It doesn't even answer questions like Where? When? Why? Who? What? and How? Well, Young-Earth Creationism at least tries to answe "who" and "when," but Intelligent Design refuses to answer even those two questions.

The catholic church itself does not demand creationism as a belief. There is room for intelligent designers, and evolutionism in most Christian theology. Even though you can't fill the holes in evolutards theories any more than intelligent experts can. Real Christians don't spend a lot of time worrying about evolution or creation. Not really important to every day life. Stick to basing your reality on the plainly observable if that's all you can muster. Dismiss all the miracles, historical evidence of biblical accounts and Christ, holes in evolution, and the beginning of the universe, etc.

1: Miracles are by definition are things that can't happen. So they didn't.
We call this "people making things up" it happens all the time.
2: There is no evidence for christ, none, nada, zip. All you have is few mentions in later decades some of which are forgeries and others are just people mentioning christians.
3: Present what you think as holes in evolution so I can laugh. Evolution is a fact.
4. The beginning of the universe eh. You are expecting science to know everything NOW. Well it may surprise you to know that science isn't over yet. But interestingly when science discovers how stuff works it has never turned out to be magic.
