They attack biology and cosmology based on contradicting Biblical creation myths, why don't they attack linguistic science?

Modern linguistic sciences contradict the Tower of Babel story just as strongly as the others contradict the Biblical creation stories . It is demonstrable that the origins of languages is nothing like the Tower of Babel story, yet they are mysteriously silent on this.

Shouldn't we be 'teaching the controversy'?

You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.

Oh, they do. Tell them that Paul didn't write all of the epistles and that we can tell this by analyzing the the way it was written, and they'll object.

The Tower of Babel story is really about the Assyrians/Babylonians conquering the Israelites/Hebrews/Jews and taking them off into captivity.

It also pays to remember that a number of recent writers wrote the Bible. The KJV was written by a committee with different people writing different books. Consequently their styles will differ.
