One nice slice of of dried and salted cod. This cod must be unsalted by dipping it in various fresh water containers (a relic from days past of food conservation that is still used in this case because it lends a special flavor to that fish). Then, roast it!, add some potatoes - these are half-boiled and then you finish cooking them in the oven - the skin becomes brittle and we punch it out - we even call this way of cooking potatoes "punch potatoes".
Now, we're talking about a miller, right? a guy with access to copious amounts of fresh olive oil (so-called Extra virgin)... fish must be swimming in olive oil - restaurant owners like to skimp on the olive oil, when they serve this dish... -.-'
