I started with a Thrustmaster T-flight Stick X and it did it me OK for a year. It has lots of buttons and is quite cheap. I've upgraded it to a Thrustmaster T16000M fcs though which is significantly better but also twice as much money. The fcs is the newer version. Many people have recommended the T16000m to me as an upgrade.

I upgraded because I play Elite Dangerous and needed better sensitivity for using fixed weapons. The difference is quite significant. It doesn't have a dead spot in the middle and can allow for very fine movements. For example with the Stick X the stick would rub a bit and creak as I used it, probably because you can adjust the sensitivity at the bottom and this works by clamping something against base of the stick inside.

The HOTAS version of many sticks have a big handle for thrust control, but you can generally find cheaper versions of the same joysticks with a smaller slider that can be used for the same purpose. This slider is positioned nicely on the Stick X.

I actually use two joysticks myself, one in each hand, rather than use a HOTAS. The T16000m can be set up to use with either hand which is great if you are left handed.

The joystick I use in my left hand is a Mad Catz cyborg v1 which is relatively cheap and doesn't rub or creak. This is a genuinely ambidextrous stick which feels good in either hand without any changes having to be made. The advantage of this is that you have lots of buttons available to your thumb and fingers without having to take your hand off the stick. This is because it has a shift key that can be used in combination with the other buttons to double the number of controls.

The Saitek sets are pretty good. I got the stick and rudder pedals and they're not overly expensive.

Saitek has the advantage that all the controlls can be mapped in a million different ways, using the software.
