It can be done, but I strongly advise against it. Microsoft idiotically made Internet Explorer a vital component in manually retrieving Windows updates from the web. Uninstalling Internet Explorer may cause other problems I haven't observed.
What are you talking about? I've uninstalled Internet Explorer plenty of times, and it's worked just fine. You're thinking of "Explorer" which is a totally different program. IE can be safely uninstalled...
...Unless they changed this in Windows 7 or something... then that's stupid.

I don't use I.E to download better browsers...I use Safari for that (although to be fair, Safari is a pretty decent browser anyway).

To use the Windows update site, you have to access it using Microsoft Internet Explorer 5 or later.
You are getting Internet Explorer confused with the rendering engine that runs Internet Explorer.

Personally, I get my Windows Updates via Firefox with the IE Tab 2 extension installed.
