When you make crumb cake, prepare twice as much of the crumb topping as normal.  Pour half the batter into your baking dish, than sprinkle on half the topping.  Repeat.  You end up with the traditional crumbly, crunchy topping on top of the cake, but a much soft layer of the crumb mixture in the middle of the cake.
