My taste in books is all over the place like my taste in music.

Pretty much all over the place.  The more varied the recommends the better - fiction, non-fiction, all genres etc etc

My interest is all over the place too, but not all over the place at the same time.   I tend to have clear areas of focused interest at each moment.    Reading something that pertains to my area of interest of the moment seems to be much more fruitful.   I tend to be willing to go through the trouble to follow up citation and think more critically about what I read, and as a result get more from it.

So if I were to ask for recommendations, I would name my current area of interest and ask for recommendations pertaining to that.

I’m the opposite. I’m currently reading four books - I keep one in the bedroom, one in each bath, and one in the shop. I find that I have no trouble with keeping up my interest in all four.

Just hard to get into.

Not as refined as his later books.

I'll give you five authors, avoiding obvious choices such as Pratchett, Tolkien, or King, and let you select the books. There are way too many for me to narrow it down more than that.

Neil Gaiman
Seanan McGuire/Mira Grant (1st pseudonym)/A. Deborah Baker (2nd pseudonym)
Robert Rankin
Jim Butcher
Richard Kadrey

I haven't read a bad book yet from any of these authors.
