Love steak.
Don't mind going to fancy restaurant and paying a bunch for a good one, either.
However-
I'm really bad at cooking them. Just don't have the knack at all. Fire up the grill or the broiler and I assure you, I can disappoint totally.
So recently, finally spooled off a cooking show and they panfried a steak.
Hmmm.
Just bought a new electronic cooking thermometer (Thermapen 3) and realized it is fast and responsive enough to maybe be useful in panfrying a steak,
Ding ding ding !!! we have a winner!! I panfried an edible steak today !!
Really, best steak by far, of any I have ever attempted to cook. Got a good sear on the outside and then kept poking it with the Thermapen 3, and when it hit 130F, I had a damn good steak. Managed to get the garlic powder and salt/pepper close too. After I took it out of the pan, let it rest a bit and also pour 2 tablespoons melted (real) butter over it and it was fine. Tasty, juicy, just fine for one I cooked. Granted, it's still a lightyear from the Venice Inn one Michael Simon gave a nod to, but for my stove and me, not having to go anywhere, and not spending a $100, it was fine.
And I have several vacuum packed Tiefenthaler ribeyes in the freezer. Was going to give them away, hate wasting them in failed experiments on the grill trying to get one edible, but now, looks like I get to enjoy them.

Instant read thermometer FTW.
Marinated some chicken hind quarters - tried something new, instead of marinating them overnight, I vacuum packed them in mojito lime marinade for a couple of hours and my gf grilled them. OMG, so good.

the thermapen was $70
hard to justify spending that on a cooking thermometer till it got here and I started using it
It is a really useful thing.
How hot is the soup I warmed in the microwave? 118F. Hmm, another 45 seconds . . .
I knew the pan was hot before I dropped the steak in it too, just short of 400F, close enough.

Yeah my results cooking meat and other highly temperature sensitive foods vastly improved when I started using a thermometer. Makes it a lot harder to screw up.

What a coincidence, Nymphadora -- I also have a large bowl of home-made "mess up your A1c and scare the crap out of the lab tech," in the form of caramel corn puffs:
- Preheat oven to 250°.
- Pour 1 bag hull-less popcorn twists (I used Old Dutch) into a deep roasting pan.
- In a reasonably deep pot on the stovetop, make a caramel consisting of 1 cup butter, 1 cup brown sugar and half a cup of corn syrup, cooked for 2 minutes and then made into foam by adding a teaspoon of baking soda. Continue cooking and stirring till the foam starts to cook down (just a minute or two).
- Pour over the popcorn twists and toss around to coat, then bake for 45 minutes. About every 15 minutes, take it out of the oven and mix a bit more.
- Dump the whole mass out onto a large sheet of parchment paper to cool till it turns crispy, then bust it apart into smaller pieces and put into the container of your choice.
Also made curried chickpeas and rice for supper, and at 10:30 I'm going downstairs to finish mixing up another batch of Icelandic dark rye bread -- the stuff that takes 8 hours to bake in a super-slow oven. If I play my cards right, it'll be ready to take out of the oven just as I'm coming downstairs in the morning to have breakfast.

Yeah, I'm kinda gently slapping around my pancreas, too. Had a bowl of plain greek yogurt with honey (preceded by cheese toast on sourdough with Tabasco).

I am literally drooling at this.
Where has this been all my life?
